You need this:
- 1 onion
- 1 carrot
- 1 stalk of celery
- 150g lentils / red lentils
- 300g peeled tomatoes
- 1 garlic clove
- 50ml red wine
- 100ml vegetable broth
- 2 tbsp tomato paste
- 1 tsp maple syrup / sugar
- 1 bay leaf
- 1 sprig of rosemary
- 1 pinch of salt / pepper
- olive oil
- Parmesan
This is what you have to do:
Step 1:
1 onion, 1 carrot, 1 celery, olive oil
Cut vegetables into small cubes. Pour olive oil into a hot pot and braise the vegetables over medium heat for about 8 minutes, stirring occasionally.
Step 2:
2 tbsp tomato paste, 1 tsp maple syrup
Add tomato paste and maple syrup/sugar and roast for 2 minutes, stirring frequently.
Step 3:
150g lentils, 300g tomatoes, 50ml wine, 150ml vegetable stock
Add lentils, deglaze with peeled tomatoes, wine and vegetable stock.
Step 4:
Bring to the boil briefly and simmer over low heat with the lid closed.
Tip to save fuel: After two thirds of the cooking time, remove the lentils from the flame and simply let them steep.
Step 5:
Meanwhile, cook the spaghetti according to instructions and finally add the lentil bolo to the pot and heat it together. Sprinkle with more parmesan and you're done!
