Tasty, vegan Asian Noodles
You need dinner inspo that you can vary as you like? Here’s your basic recipe!

You need:
- 200g Mie noodles
- 200g smoked tofu
- 1x small broccoli
- 300g greens (spinach, chard, pak choi...)
- 2x garlic cloves
- 4 tbsp soy sauce
- 2 tbsp sesame oil (any other neutral oil will do as well)
- ½ tsp chili flakes
- salt & pepper
Let's do this:
Step 1:
200g mie noodles
Cook noodles according to the instructions on the package.
Step 2:
2 cloves of garlic, smoked tofu, broccoli
Mince the garlic cloves, cut the smoked tofu into cubes, and chop the cleaned broccoli into bite sized pieces.
Step 3:
sesame oil, smoked tofu, broccoli
Heat sesame oil in a pan at high temperature and once it’s hot, add broccoli and smoked tofu. Sear for 10 minutes over medium high heat.
Step 4:
300g greens, cooked mie noodles, 4 tbsp soy sauce, chili flakes, salt, pepper
Add the greens and the cooked noodles to the pan and heat through. Take the pan off the heat and add soy sauce and chili flakes, stir well. Season with salt and pepper to taste.
You can replace the broccoli with any other kind of firm vegetable and in case you‘re not into smoked tofu, plain tofu works just as well. Or you leave it out entirely. Main point – enjoy!
